Christmas is almost upon us and if you are like me, you have probably already done a significant amount of cooking to take food to get togethers or have hosted a family Christmas catch-up that you have catered for. If this is the case, you might be looking for some super easy recipes that still look impressive, festive and make Christmas day feel special but want to keep the workload as low as possible.
Then this post is for you! I have scrolled through the archives of the blog and come up with recipes that readers have made and loved and that are super easy to make. A number of these can be made ahead so you don’t have to spend all of Christmas Day in the kitchen.

Starters
Here are a couple of recipes that will work beautifully as starters on Christmas Day:
Chicken Sandwiches - while you will need to make the sandwiches on Christmas Day you can make the chicken mixture the night before so it is very quick and easy to put together the sandwiches on the day. The combination of sour cream and mayonnaise makes the chicken mixture so delicious.
Savoury tarts - this is a very easy savoury tart recipe to make. It is pretty versatile as you can add a range of ingredients to this recipe - use up left overs in the fridge if you like! The other fantastic thing about this recipe is that you can freeze them. I have used these tarts as starters on a number of occasions. I cook them in the days leading up to the event, then pop them in a moderate oven covered with foil and reheat for about 15 minutes, and they taste great.
Salads
Pearl barley salad - you could cook the barley the night before, prep the rest of the ingredients for the salad and simply assemble it on Christmas Day.
Cabbage and apple salad - as with the salad above, with the exception of the apple you could prepare the ingredients the night before and then assemble it on the day.
Mains
Slow cooker shredded beef and rocket salad - this beef comes out so tender and with a good amount of maple syrup in the cooking liquid it has a delicious sweetness to it. You can put this on early Christmas morning and then forget about it until it is time to serve it up.
Dukkah crusted salmon - you can either make your own dukkah the night before or buy dukkah to cut that step out completely. You can either pan fry the salmon or for a more hands-free option cook it in the air fryer if you have one.
Dessert
Ice cream cakes - you can make these many days ahead and without doubt they are always one of the most popular desserts each Christmas Day. I have a number of ice cream cake recipes on the blog and none of them involves churning ice cream! They are all based on slightly melting bought ice cream and adding flavours to it.
